I've read through some older posts asking similar questions, but they are mostly a couple years old and didn't quite answer my question. And I want to hear the perspective or fellow Minneapolis cyclists rather than just general advice from the internet.
I just moved into Minneapolis and bought myself my first actually nice bike; picked up a Giant Revolt from Tangletown Bike Shop. I'm going to be using the bike for commuting (when the weather is nicer, because I'm a baby), general getting around town (like quick grocery trips, doctors office visits, going to the gym, etc. mostly around southern Minneapolis or St Paul), and longer leisure rides on the weekends.
As for my question, with proper deterrent and common sense what is your perceived risk of actually getting a bike stolen? I'm currently trying to decide whether to buy a hefty U-Lock (looking at one of the Kryptonite NY locks right now) to pair with my cheaper U-Lock I have right now and just using this one bike or buying a sub $200 beater bike off craigslist that I wouldn't mind too much if it disappeared and just using that with my cheaper lock I have now in any situation where I'd be letting the bike out of my site for more than a few minutes. The longest I ever really expect to have the bike locked up out of my sight would be when I go to the gym (one near Nicollet and 26th or another off on a side street near the 280/I-94 interchange) a couple times a week for 2-3 hours at time, and very rarely ever after dark. For commuting, I can take my bike into my office so no worries there.
Additional question, has anyone here had experience actually having to actually use and get a claim out of bike insurance companies? Are they worth the hassle or should I just save the money?

As most of you would expect nothing is going to come out of either of those. We have serial numbers. Really I was curious if anyone had experience recovering bikes. Other than checking craigslist and facebook marketplace, does anyone know where bikes get resold? I was going to swing by local pawn shops and used bike shops but other than that I don't know where to look. This is a common problem these days so I was sort of hoping there's a clear second hand market.
